* I missed sandwiches and toast so much when I started AIP! Our Rustic Bread Mix helps me get my fix when a craving strikes. I like it best toasted or grilled, so when I make paninis for the rest of my non AIP family, this is the simple recipe I use for mine. 

  • 2 slices AIP bread, baked in a 5x5 pan for a good sized sandwich
  • 1/4 cup shredded turkey or chicken
  • 1-2 Tbsp. mashed avocado
  • 1 clove garlic, minced
  • 1 Tbsp. chopped fresh basil
  • Optional: AIP cheese or a dash of salt
Mix up all filling ingredients and spread onto one slice of bread. Top with second slice and grill in a panini press (we use a George Foreman grill) for about 4 minutes. Enjoy!
