* German chocolate cake has always been my dad's favorite and something he always requests on his birthday. I wanted to be able to both make, and eat, a slice of cake that resembles the original as much as possible. With this recipe, I can! You will need:
- 1 pkg Truly AIP Carob Cake Mix, prepared as directed
- 1 recipe of Coconut Date Frosting
Follow package directions for two 6" rounds. While cooking, make frosting. You will need:
- 1 cup packed pitted dates
- 1/2 cup coconut milk or cream
- 1/2-1 cup shredded coconut
- 1/2-3/4 tsp salt
- Splash of vanilla extract
In microwave safe bowl, cover dates with water. Microwave for one to two minutes and let sit for about 10 minutes to allow dates to soften and cool down. Blend dates and water together in a blender, adding more if necessary to get a smooth consistency. Combine date and water mixture with coconut milk in a medium saucepan. Cook on medium low, stirring often, until most water evaporates leaving a smooth and creamy caramel-like frosting. Remove from heat when it has a thicker applesauce consistency. Stir in shredded coconut, vanilla and salt, let cool, and frost your 2 layer german "chocolate" cake!
