- 1/2 cup Truly AIP Rustic Bread Mix
- 2 tsp. oil
- 1 Tbsp. maple syrup
- 1/2 cup + 3 Tbsp. water
Whisk or blend all ingredients together until no clumps remain. Batter will be very thin. Preheat a nonstick pan on medium-low. Lightly oil before cooking first crepe. Using about 1/8 cup of batter for each crepe, pour and spread quickly on your pan. Cook for about 45-60 seconds, then gently flip and cook for another minute. Add some strawberries, roll it up and drizzle with coconut cream sweetened with maple syrup, if desired. No need to break out the beater!
