- 1/4 cup Truly AIP All-Purpose Baking Mix
- 2 Tbsp. tapioca or arrowroot powder
- 1/4 cup water OR 3 Tbsp water plus 1 Tbsp maple syrup
Whisk or blend all ingredients together until no clumps remain. Batter will be very thin. Preheat a skillet or nonstick pan on medium-low. Lightly oil before cooking first crepe. Using a large spoon, pour and spread quickly on your pan. Cook for about 45-60 seconds, then gently flip and cook for another minute. Add some strawberries, roll it up and drizzle with coconut yogurt sweetened with maple syrup, if desired. 1 servings
