- 1 cup Truly AIP All-Purpose Baking Mix
- 2 Tbsp. palm shortening or coconut oil
- 5-7 Tbsp coconut milk (depends on thickness)
- 1/4-1/3 cup chopped fruit
Preheat oven to 350. Cut shortening into baking mix and then add in coconut milk. Add extra if needed to obtain a soft dough that doesn't stick to your hands. Fold in fruit, form a ball with hands and flatten into a circle about 3/4 inch high on a parchment lined baking sheet. Gently cut into fourths and separate triangles. Bake for 17-20 minutes until lightly browned and puffed.
Note: These are not a super sweet scone. For a sweeter scone, replace 1 Tbsp. of coconut milk with 1 Tbsp. of maple syrup.
