* Every time the end result in my baking ventures rivals the "traditional version," I literally jump for joy. This bread is no exception. It has an excellent crumb and melts in your mouth. Pairs beautifully with a cup of hot Truly AIP chai tea! To make, you will need:

  • 2 cups (240 grams) Truly AIP All-Purpose Baking Mix
  • 3/4 cup pureed pumpkin
  • 1/3 cup oil
  • 1/2 cup maple syrup
  • 1 tsp. cinnamon
  • 1/2 tsp. ground mace
  • 1/8-1/2 tsp. ground cloves (choose your level of spice!)

Mix all ingredients well and pour into an 8x4 loaf pan lined with parchment (exposed areas greased). Bake at 350 degrees uncovered for 30 minutes, then cover loosely with foil for another 25-30, until toothpick comes out clean. Remove from oven, allow to cool for 10 minutes, then remove loaf from pan to a wire rack. Cool completely before slicing.

Notes: Bread mix recipe is the same as above except for the amount of water called for. Use 1/4 cup instead of 1/2 cup. Happy baking!
