* Variety is the spice of life, and there are a variety of ways to bake up this recipe. Mini bundt cakes make anything a little fancier, and muffins are just easy. You can't go wrong either way. 

  • 160 grams Truly AIP All-Purpose Baking Mix
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. mace
  • Dash ground cloves
  • 1/2 cup mashed pear
  • 1/2 cup diced pears
  • 3 Tbsp. + 1 tsp. maple syrup
  • 3 Tbsp. light tasting oil

Preheat oven to 350 degrees. Line muffin pan with paper liners. Lightly grease bundt pans and sprinkle in a light dusting of cassava flour.

Mix dry ingredients together in mixing bowl and blend in remaining ingredients, except for diced pears. Fold in pears gently and distribute batter evenly into muffin cups or mini bundt pans. Sprinkle a coconut sugar/cinnamon mixture lightly over muffins, if desired. Bake muffins for 18-20 minutes. Mini bundt pans that measure 4" across the middle take about 25 minutes. Done when toothpick comes out clean.

Maple Cinnamon Glaze

  • 2 Tbsp. arrowroot or tapioca starch
  • 1/4 tsp. cinnamon
  • 4 tsp. maple syrup
