I thought a really good AIP pancake would never be possible. But then, one happy accident led to another and showed me otherwise. Our Rustic Bread Mix makes the loveliest pancake I have seen and eaten since I started an autoimmune friendly diet. And it's so easy to put together, just like the "regular" pancake mixes everyone else gets to use. Each bag of mix will make approximately 24 three inch pancakes. To make four pancakes, you will need...

  • 1/2 cup Truly AIP Rustic Bread Mix
  • 1 Tbsp. maple syrup
  • 1 tsp. avocado oil
  • 6 Tbsp. water
Mix all ingredients together until no clumps remain. Heat a nonstick griddle on med-high to high heat for best results. Scoop a couple small spoonfuls of batter onto griddle and spread evenly to form a pancake about 3 inches in diameter. Cook for about 90 seconds or until edges are dry. Flip and cook an additional 90 seconds until middle springs back when pressed lightly. Enjoy with maple syrup, fruit, or tigernut butter!
