* I thought a really good AIP pancake would never be possible. But then, one happy accident led to another and showed me otherwise. Our Rustic Bread Mix makes the loveliest pancake I have seen and eaten since I started an autoimmune friendly diet. And it's so easy to put together, just like the "regular" pancake mixes everyone else gets to use. Each bag of mix will make approximately 28-30 three inch pancakes. To make 4-5 pancakes, you will need...

  • 1/2 cup Truly AIP Rustic Bread Mix
  • 1 Tbsp. maple syrup
  • 1 tsp. avocado oil
  • 1/2 cup water (add a little more for a thinner pancake)
Mix all ingredients together until no clumps remain. Let batter rest for a few minutes. Heat a nonstick griddle on med-high to high heat for best results. Scoop a couple small spoonfuls of batter onto griddle and spread evenly to form a pancake about 3-4 inches in diameter. Cook for about 90 seconds or until edges are dry. Flip and cook an additional 60-90 seconds until middle springs back when pressed lightly. Enjoy with maple syrup, fruit, or tigernut butter!
