* Why is it that crunchy and creamy just go together? Try a cup of your favorite coconut yogurt topped with this sweet, crunchy AIP granola... YUM!
Mix together in a medium bowl until combined well:
~ 3/4 cup tigernut flakes
~ 1/4 cup coconut flakes
~ 1/4 cup broken up banana chips (BARE brand will result in chewy bananas. If using, add after cooking)
~ 1/2 tsp. cinnamon
~ 1/2 tsp. vanilla
~ Pinch of salt
~ 1/4 cup Truly AIP All-Purpose Baking Mix
~ 2 Tbsp. honey
~ 2 Tbsp. hot water
Spread evenly on baking sheet and bake about 8-10 minutes at 300. Stir and spread again and bake another 6-10 minutes, watching closely, as browning occurs rapidly when it starts. Let cool completely before putting in a container. Keeps well for at least a week at room temperature.
Notes: In lieu of honey and hot water, you can use 1/4 cup mashed banana or applesauce. It’s a little less sweet, but still so satisfyingly crunchy!
