* Why make an entire cake mix if you can make a single serve mug cake in less than 5 minutes? Delicious with some caramel cream (recipe below).
CAROB MUG CAKE
- 1/4 cup Truly AIP Carob Cake Mix
- 3 Tbsp. coconut milk
Mix all ingredients in any microwave safe mug and then microwave on high for 90 seconds. Let cool slightly, add a dollop of coconut cream or caramel cream and enjoy!
CARAMEL CREAM
Microwave 1/2 cup packed dates and 1/2 cup water on high for about 90 seconds and let sit for 5-10 minutes to allow dates soften. Add dates, water and 1/2 cup full fat coconut milk to a high speed blender and blend until smooth. Add salt to taste. Use immediately, or for a thicker, creamier texture, refrigerate until cold. Use within 5-7 days.
