* Why make an entire cake if you can make a single serve mug cake in less than 5 minutes? Delicious with some caramel cream (recipe below).
CAROB MUG CAKE
- 1/4 cup Truly AIP All-Purpose Baking Mix
- 1/4 cup roasted carob powder
- Pinch salt
- 2 Tbsp. oil
- 3 Tbsp. maple syrup
- 3 Tbsp. coconut milk
- Splash vanilla extract
Mix all ingredients in a 12 ounce microwave safe mug and then microwave on high for 90 seconds. Let cool slightly, add a dollop of coconut cream or plain coconut yogurt mixed with maple syrup. Enjoy!
CARAMEL CREAM
Microwave 1/2 cup packed dates and 1/2 cup water on high for about 90 seconds and let sit for 5-10 minutes to allow dates soften. Add dates, water and 1/2 cup full fat coconut milk to a high speed blender and blend until smooth. Add salt to taste. Use immediately, or for a thicker, creamier texture, refrigerate until cold. Use within 5-7 days.
