* This is a great addition to the end of a festive holiday meal. It can easily work as a reintroduction with the addition of gluten free rolled oats! 

In an 8x8 baking dish, mix the following ingredients together.

  • 5-6 cups chopped apples 
  • 2 cups cranberries, chopped 
  • 3 Tbsp tapioca or arrowroot starch
  • 1/2 cup maple syrup

Mix topping ingredients together and sprinkle evenly over fruit mixture. 

Topping:

  • 1 cup Truly AIP All Purpose Baking Mix
  • 1/3 cup coconut sugar
  • 1/2 cup coconut oil or palm shortening, melted 
  • 1 cup GF rolled oats OR sliced tigernuts
Bake at 350 for 50-60 minutes until toothpick easily pierces an apple chunk. Cover with foil towards end of baking to avoid over browning.
