Cake batter

  • 1 1/2 cups Truly AIP All Purpose Baking Mix
  • 2 Tbsp. Oil
  • 2 Tbsp. Maple syrup
  • 1/4 cup coconut yogurt 
  • 1/4 cup water

Streusel Topping

  • 1/4 cup Truly AIP All Purpose Baking Mix
  • 2 Tbsp. Coconut sugar 
  • 1 tsp. Cinnamon 
  • 4-5 tsp. Oil

Mix cake ingredients together and spread in a lightly greased 8x4 loaf pan. Mix streusel ingredients together using 4 tsp. of oil to start. Streusel should be crumbly but hold together when pinched between fingers. Press streusel lightly into cake batter. Bake at 350 for 20-24 minutes until golden brown and toothpick comes out clean.

Note: This is very lightly sweet. For a sweeter version, swap out some of the water for maple syrup.

This was fabulous! Only ĥad 9×5 loaf pan…loaf was only ~1.5-2" thick. Used cocojune Pure coconut yogurt. Loaf was spongey and moist, NOT gummy. Was sweet enough with the crumble top, didn’t need to swap out water for more maple syrup. Non-aip folks will like this too. Only downside is that due to thickness only made about 5 slices. Will make again!
