* When you remove gluten, dairy and eggs from your diet, it’s easy to feel like you’re missing out a bit, right? Well, here’s a recipe for bread pudding that leaves out all those things!
What you’ll need:
- About 6 slices of banana bread made with Truly AIP All Purpose Baking Mix
- One large banana
- One recipe of vanilla pudding (below)
Steps:
- Cut bread into cubes and spread half into a bread loaf pan.
- Slice banana into rounds and lay on top of bread cubes.
- Spread remaining bread cubes over bananas.
- Pour vanilla pudding over everything and refrigerate until set.
Vanilla Pudding
Pour one 13.5 oz can of coconut milk into a saucepan. Add 1/8 tsp. salt. Sprinkle 1 1/4 teaspoons gelatin over milk and allow to bloom. Heat milk over low until gelatin is dissolved. Turn heat off and whisk in 1/4 cup maple syrup and 2 tsp. vanilla extract.
