* When you remove gluten, dairy and eggs from your diet, it’s easy to feel like you’re missing out a bit, right? Well, here’s a recipe for bread pudding that leaves out all those things!

What you’ll need:

  • About 6 slices of banana bread made with Truly AIP All Purpose Baking Mix
  • One large banana 
  • One recipe of vanilla pudding (below)

Steps:

  1. Cut bread into cubes and spread half into a bread loaf pan. 
  2. Slice banana into rounds and lay on top of bread cubes.
  3. Spread remaining bread cubes over bananas.
  4. Pour vanilla pudding over everything and refrigerate until set.

Vanilla Pudding 

Pour one 13.5 oz can of coconut milk into a saucepan. Add 1/8 tsp. salt. Sprinkle 1 1/4 teaspoons gelatin over milk and allow to bloom. Heat milk over low until gelatin is dissolved. Turn heat off and whisk in 1/4 cup maple syrup and 2 tsp. vanilla extract.
