* I would never claim these to be an exact replica of a chewy bagel made with enriched, bleached white flour, BUT it is close and worth the effort so I can enjoy my favorite way to eat bagels… topped with dairy free cream cheese and smoked salmon!

  • 1 1/4 cup Truly AIP All-Purpose baking mix
  • 1/2 cup tapioca starch 
  • 2 Tbsp pumpkin puree OR 1.5 Tbsp water
  • 1 Tbsp maple syrup 
  • 8 Tbsp warm water
Fill a large pot with 2-3 inches of water and bring it to a boil. Preheat oven to 425 and line a baking sheet with parchment paper. Mix dry ingredients together, then add wet ingredients and mix until smooth. Divide into 3 equal parts and shape each into a bagel shape with a 1/2” hole in the middle. Carefully drop each bagel into boiling water and boil for about 4 minutes. Using a slotted spoon or spatula, carefully remove each bagel and place onto baking sheet. Bake bagels for about 20 minutes. Let cool completely before slicing!
