* Try this pumpkin spice waffle the next time you need a taste of fall in a hurry! Makes a great breakfast or snack and will keep you satisfied for hours.

  • 3/4 cup Truly AIP All-Purpose Baking Mix
  • 3 Tbsp. pumpkin puree
  • 2 Tbsp. oil
  • 6 Tbsp. water (plus more if batter seems too thick)
  • 1 Tbsp. coconut sugar (optional)
  • 1/2 tsp. cinnamon
  • 1/8 tsp. mace
  • Pinch cloves

Mix all ingredients together and let stand for a few minutes while your waffle iron preheats. Pour entire contents into a lightly greased Belgian waffle maker and bake according to manufacturer's directions. Remove to a wire rack briefly when done to avoid excess condensation between plate and waffle.

For pancakes, cook as you normally would, for about 90 seconds per side.

Top with your favorite toppings! Maple syrup is always a good flavor with these.
