* When it's cold outside, I dream of hopping onto a plane and heading somewhere warm and possibly tropical. These cupcakes can't take the place of a warm, sunny beach, but it can certainly make me think of one when I take a bite of the tropical flavors of pineapple and coconut paired with banana... To make a batch of 4 cupcakes you will need:

  • 2/3 cup (80 grams) Truly AIP All-Purpose Baking Mix
  • 1/4 cup crushed pineapple
  • 1/4 cup mashed banana
  • 1/4 cup chopped grated coconut (or shredded)
  • 2 Tbsp. maple syrup
  • 2 Tbsp. oil
  • 1/4 tsp. cinnamon
Preheat oven to 350 and place paper cupcake liners into muffin tin. Mix all ingredients together and divide equally into cupcake liners. Bake for about 20 minutes until golden brown and toothpick comes out clean. Let cool completely and enjoy plain or frost with "cream cheese" frosting or vanilla bean "cream cheese" frosting. (Cupcake shown is frosted with vanilla bean "cream cheese" frosting.)
