* These banana pancakes are so delicious and sweet from the mashed banana, they make a perfect finger food for little ones or on the go!

THIS RECIPE HAS NOT BEEN TESTED WITH OUR NEW, REFORMULATED BAKING MIX THAT CONTAINS PLANTAIN FLOUR. IT MAY NEED SLIGHTLY LESS LIQUID.

  • 1/2 cup Truly AIP All Purpose Baking Mix
  • 1/4 cup mashed banana
  • 1/3 cup water
  • 1 tsp. oil

Mix all ingrediients together while your griddle or skillet heats up. Grease lightly then spoon batter onto griddle. Cook about 90 seconds, then flip gently and cook another 90 seconds. Pancake is done when pancake bounces back when lightly pressed.

Makes one hearty and delicious serving.

I just mashed 2 bananas, added 1 cup of new mix, 1/2 tsp baking soda, a little maple syrup and maybe 1/4 cup of water. They are in the oven baking as banana muffins and they are rising beautiful!! I bet they will be delicious. Stay tuned.
