- 3/4 cups (90 grams) Truly AIP All-Purpose Baking Mix
- 3/4 tsp. cinnamon
- 2 Tbsp apple juice or water
- 1/2 cup diced apples
- 2 Tbsp maple syrup
- 2 Tbsp avocado oil
Whisk cinnamon into baking mix then add remaining ingredients and mix until well combined. Spoon batter equally into four paper lined muffin cups. iTop with cinnamon streusel and press lightly into batter. Bake at 375 degrees for about 22 minutes. Use toothpick test.
Cinnamon streusel
- 2 Tbsp Truly AIP All-Purpose Baking Mix
- 1 Tbsp coconut sugar
- 1/2 tsp cinnamon
- 2 tsp oil
Mix until crumbly. The goal is a crumble that sticks together in clumps but isn’t too doughy. Add a little extra mix, if necessary.
