  • 2 cups (240 grams) Truly AIP All-Purpose Baking Mix
  • 2 tsp. cinnamon
  • 1/2 cup apple juice or water
  • 1 1/2 cup diced apples
  • 1/3 cup maple syrup
  • 1/3 cup light tasting oil

Whisk cinnamon into baking mix then add remaining ingredients and mix until well combined. Scrape batter into a parchment lined loaf pan. Top with cinnamon streusel and press into batter OR mix chunks lightly into batter. Bake at 350 degrees for about one hour. Cover lightly with foil halfway through baking time, if necessary. Use toothpick test.

Cinnamon streusel

  • 1/4 cup Truly AIP All-Purpose Baking Mix
  • 2 Tbsp coconut sugar 
  • 1 tsp cinnamon 
  • 4-5 tsp oil
Mix until crumbly. The goal is a crumble that sticks together in clumps but isn’t too doughy. Add a little extra mix, if necessary.
