AIP Rustic Bread Mix - GF, Vegan, Kosher, Autoimmune Friendly - Just Add Yeast OR Kombucha - Makes waffles, pancakes, crepes and pizza crust, too!
UPDATE: Make this bread with active dry yeast for a slightly different result! It's less expensive than kombucha, and some of us don't care for the flavor of kombucha.
Dissolve 1/2 teaspoon honey into 1/2 cup 105-110 degree water and whisk in one packet, or 2 1/4 teaspoons, active dry yeast. Let sit until foamy and fluffy, about 5-10 minutes. Add yeast mixture, 1/4 cup oil and 1 1/4 water to bread mix and stir until no lumps remain. Pour batter into parchment lined 8x4 bread pan and smooth top VERY gently. It will not rise much, but it will hold it's shape. Bake at 375 for 60-65 minutes. Loosely tent aluminum foil over bread about halfway through cooking to prevent overbrowning. Let cool for 10 minutes, then remove loaf to wire rack to cool completely.
Our bread mix has shown to be so versatile, it will probably need a new name! It makes one small loaf of bread, two pizza crusts, four waffles, more than two dozen pancakes or three dozen crepes! See our recipe section for directions.
We have changed the directions for baking bread with our bread mix: Instead of 14 oz. kombucha, this blend needs 16 oz. kombucha to obtain a better result.
While this bread is NOT the same as we were all used to before AIP, it can be a great addition to your diet in a multitude of ways. We think our bread is best as toast or a grilled sandwich, but it makes pretty great bread stuffing to go with a roast chicken or turkey!
TIPS FOR SUCCESS:
- Make sure you have a bottle of fresh, fizzy plain kombucha ready! Mix it into your bread mix and watch it fizz as you ensure batter is smooth.
- Line bottom and two sides of your pan with some parchment (for easy removal), and grease the exposed parts of the pan with just a little oil.
- Spoon batter into loaf pan and smooth top of loaf.
- DO NOT UNDERBAKE! If in doubt, 60 minutes for an 8 X 4 loaf, 65 minutes for a 5 X 5 loaf.
- Allow to cool for 10 minutes, but no longer, before removing loaf to a cooling rack.
- Cool completely, then slice to your desired thickness.
The size of the baking pan determines the size of the slice, and we prefer a 5 x 5 to bake ours in, most of the time. We like an 8 x 4 for smaller slices. We've also used mini loaf pans to create tasty hors d'oeuvres with a smear of mashed avocado and a sprinkling of fresh sprouts.
