* Every Fall, I always seem to come face to face with the pumpkin spice donut stand either at the fair or local farm. So I have to have my own version, of course! These can never be the same, but they make a very nice substitute! Recipe makes 5-6 standard size baked donuts.

  • 1 cup plus 1 Tbsp. Truly AIP All-Purpose Baking Mix
  • 1/3 cup pureed pumpkin
  • 1/4 cup oil (avocado is great for no flavor)
  • 1/3 cup maple syrup
  • 1 tsp. cinnamon
  • 1/4 tap. ginger
  • 1/8 tsp. ground cloves 
  • 1/8 tsp. ground mace

Mix all ingredients well and spoon or pipe batter into a lightly greased standard size donut pan. Bake at 350 degrees for 19-22 minutes, until toothpick comes out clean. Remove from oven, allow to cool for a few minutes, then remove to a wire rack to cool completely. Frost with maple cinnamon frosting, if desired. Or brush tops with oil and sprinkle with a mixture of cinnamon and maple sugar or coconut sugar.

Maple Cinnamon Frosting

  • 2 Tbsp tapioca or arrowroot starch
  • 1/2 tsp cinnamon
  • 1 Tbsp maple syrup
