* Granola is all well and good, but sometimes you want bite sized chunks you can pop in your mouth. As always, fully AIP elimination compliant!

Mix together in a medium bowl until combined well:

~ 3/4 cup tigernut flakes
~ 1/2 cup shredded coconut 
~ 1/2 tsp. cinnamon
~ 1/2 tsp. ground ginger
~ 1/2 tsp. vanilla
~ Pinch of salt
~ 1/2 cup Truly AIP All-Purpose Baking Mix 
~ 4-5 Tbsp.  maple syrup (determines how well chunks stick together)
 
Spread evenly on baking sheet, being careful not to separate granola into little pieces. Bake about 12 minutes at 300 degrees. Stir or fold sections over and spread out again. Bake another 6-10 minutes, checking every 2-3 minutes, as browning occurs rapidly when it starts. Let cool completely before putting in a container. Keeps well for at least a week at room temperature.
