* Holiday baking would not be complete without AIP gingerbread cookies! Whether you choose to make gingerbread people or a house, this recipe has got you covered.

  • 1 1/4 (150 grams) cups Truly AIP All-Purpose Baking Mix
  • 1/4 cup palm shortening
  • 3 Tbsp. molasses
  • 2 Tbsp. maple syrup
  • 1 tsp. ground ginger
  • 1/2 tsp. cinnamon
  • 1/8 tsp. ground cloves

Preheat oven to 350. Line baking sheet with parchment. Mix all ingredients together until you have a manageable ball of gingerbread dough. On a lightly floured surface (use tapioca, arrowroot or cassava flour), roll out dough to 1/4 inch thick and cut as desired. Place cookies on prepared baking sheet and bake for 9-11 minutes. The longer they cook, the crisper they get. Let cool on pan.

To decorate, softened coconut butter can be an easy choice as it is naturally sweet and has a good consistency. Pipe onto cookies and allow to sit until coconut butter has firmed up, or place cookies in the fridge.

Serving size is varied depending on cookie size, but 25% of them can be considered a serving!
