* Strawberry shortcake is always a refreshing summer treat, especially during a record breaking heat wave! Thankfully, toaster ovens can be plugged in outdoors to bake up a small batch of these shortcakes. The recipe below makes four 3-inch round shortcakes:
* 3/4 cup Truly AIP Scone Mix
* 2 Tbsp. palm shortening
* 1/2 cup coconut milk
* 1/2 Tbsp. vinegar or lemon juice
Preheat oven to 350 degrees. Mix coconut milk and vinegar or lemon juice together. Set aside while you cut the shortening into the dry mix. Add milk mixture and stir well. Let sit for a few minutes, then, using a spoon, drop four equal sized portions of dough onto lined baking sheet. Use fingers or back of spoon to create round shortcakes about one inch high. Bake for 15-18 minutes until browned. Let cool before slicing and serving with fresh berries and sweetened coconut cream.
