* If you don't have a can of coconut milk available, or if you just don't care for the taste of it, this recipe works just as well!
Preheat oven to 350. Line baking sheet with parchment or a silicone liner. Combine scone mix, oil, maple syrup and 6 Tbsp. water and mix well. Add extra water as needed. The key is to add enough liquid that you have a pretty soft dough that doesn't quite stick to your hands and can still be formed into the shape you want. Fold in fruit, if adding. Form 8 individual round scones OR form 2 balls and flatten each to about 3/4 inch high. Cut each flattened round into fourths and separate slightly. Bake for 17-20 minutes until lightly browned on top and bottom.

- 1/4 cup avocado oil
- 1/2 cup maple syrup
- 6-8 Tbsp. water
- 1/2 cup berries or dried fruit, if desired
