* Carrot cake scones are perfect for a weekend brunch! You'll need:

  • 1 package Truly AIP Scone Mix
  • 1 cup coconut milk, or any milk that works for you
  • 1/2 cup grated carrots
  • 1/4 cup raisins
  • 1/2-1 tsp. cinnamon
  • 1/4 tsp. ground ginger
  • 1/8 tsp. cloves
Preheat oven to 350 and line a baking sheet with parchment or a silicone liner. Mix all ingredients in a bowl until you have a soft dough, adding a bit more milk if necessary, or if you prefer a softer scone. Flatten into 2 one inch high rounds. Cut each round into four triangles and separate slightly. Bake for 15-17 minutes until golden brown. Drizzle with melted coconut butter and enjoy!
