Dessert isn't just for special occasions! Skip the decorating and mix up some carob snack bars for a satisfying treat any day of the week. Similar to brownies, but lower in sugar, you won't feel like you've overdone it eating one... or two... You will need:

  • 1 pkg Truly AIP Carob Cake Mix
  • 2 cups coconut milk, full fat or light
  • 1/4 cup maple syrup
  • 1/2 cup applesauce
  • 2 Tbsp. oil
  • 1/2 cup shredded coconut or tigernut flakes
  • 1/2 cup carob chips (recipe below)

Preheat oven to 350 degrees. Lightly grease a 13x9 inch baking dish. Mix all ingredients together and spread evenly in baking dish. Bake for 22-25 minutes, using the toothpick test to ensure batter is cooked through. Allow to cool to room temperature before cutting into bars.

Quick Carob Chips

  • 1 cup carob powder
  • 1/4 cup coconut oil, melted
  • 1/2 cup coconut butter, softened
  • 1/8 - 1/4 tsp. salt
  • 1 tsp. vanilla powder or extract
Mix all ingredients together in a bowl. Mixture will be very thick. Press into an 8 x 8 pan using a spoon or small spatula and refrigerate until hardened. Cut into hardened carob chip mixture to remove a section and cut into chunks. Keeps in fridge for at least a month.
